Made with Pinot Gris off High Altitude Vineyards and fermented on skins. The resulting wine has loads of perfumed red apple and fennel. Tannins from time on skins provides a slightly chalky, minerally texture which melds with the strawberry and citrus fruit.

Hand selected from High Altitude Vineyards picked and foot stomped leaving approximately 30% whole bunch grapes in the fermenter. Indigenous yeast is used and is matured in a 3 year old barrel for 12 months. Perfumed with dark cherries with a sniff of cola. Savoury and complex with the finest of tannins.
